I Really Love Eggs!
Eggs are by far my favorite food. In our family we play the game “If you were allowed only one food the rest of your life, what would you choose?”…the conundrum for me is always eggs or popcorn. Eggs would probably win because of their versatility and protein content. Yes, I am willing to make the commitment for the rest of my life to only eat eggs. Well, during the game anyways.
Any way you crack them…
I love that they can be scrambled, fried, or poached. They are perfectly portable when boiled, perfect for snacking or lunch. Just the boost of mid afternoon protein I love! Deviled Eggs are the perfect appetizer because they balance your protein before you start carbing out at a party. I also love that they make a perfect dinner protein when you forget to take the meat out of the freezer! Can you say Frittata!
As you can see, I truly love eggs. Well, maybe not enough to only eat them for the rest of my life, but definitely enough that I would never want to be without them. That is why I truly love the Heifer international program. A few years ago I gave my daughter, who is always looking to make a positive difference in the world, a flock of Heifer Chicks for Christmas. She received a card, and someone somewhere in the world who needed nutrition and hope received the flock of chicks. It was awesome.
Heifer has a 97% rating on Charity Navigator for their accountability transparency rating. 75% of funds collected are used specifically to support their programs and only 5% goes to Administration costs. A flock of chicks only costs $20. Pretty cool if you realize that one chicken can produce over 200 eggs per year. That is a lot of Frittata! I just had to stop writing and go buy a flock of chickens from Heifer. I don’t want anyone to be without eggs and for the cost of a visit to the movies, I just supplied eggs to someone I will never meet. Awesome!
