Easy Chewy Chocolate Brownie Cake

Have you ever awakened in the morning and had a hankering for chocolate? But not just any chocolate, but chewy, yummy, delicious chocolate that is oh so rich? I have too! And when I find myself really wanting chocolate, I like to make something quick, easy, and super chocolaty. Enter my Easy Chewy Chocolate Brownie Cake.

It’s so Easy to Make!

One of the best things about my Easy Chewy Chocolate Brownie Cake is that it is so totally easy to make! In fact it only includes 5 ingredients that you probably have in your kitchen or can easily keep around in to have on hand for a last minute guest….or a night watching TV! And it only takes about 5 minutes to mix it up!

If you are like me, you enjoy batter and cookie dough! Yum! If you do love brownie and cake batter this will be your favorite. Since you will have mixed pudding mix, milk and cake mix together, you have an egg free dough to enjoy! lol. I really thought it was tasty as did my son.

Make it your own!

As with anything, I recommend making it your own. For instance, this time that I made it I added whole pecans on top. ½ my family does not like nuts in anything, but I do! So, I added them on the top of half so that they could easily be spotted. But you could chop up a cup of pecans and add to the batter or add walnuts. Make it your own!

Also, you can choose what types of chocolate chips you want to add in. I personally enjoy dark chocolate or semi – sweet, but have made it before with milk chocolate, white chocolate, or peanut butter. I love changing recipes up and making them perfect for the occasion or the people who will be enjoying it.

 

Another idea is to add a few tablespoons of instant coffee crystals dissolved in a few tablespoons of hot water. This will make the chocolate flavors more pronounced and add a nice mocha flavor to the dessert.

Dress it up with Frosting!

The Easy Chewy Chocolate Brownie Cake is amazing on its own but is also tasty served warm with Vanilla Ice Cream. Or served room temperature with a nice chocolate frosting. I love to add a quick frosting of ½ cup butter softened, ½ tsp salt, ½ tsp vanilla, ½ cup cocoa powder and 3 cups powdered sugar. You simply mix the butter, salt, and vanilla until smooth and then add the cocoa powder. When that is mixed pour in the powdered sugar and mix till blended. If it gets to thick, add milk a teaspoon at a time until it is the right consistency. YUM!

This yummy treat is an amazing cross between a brownie and a chocolate cake. Delicious rich flavors and chewy delicious texture. Add frosting or ice cream to have the perfect treat! And it serves well warm or cold.

Ingredients

  • 1 3.9 ounce Box of Jell-o Chocolate Instant Pudding
  • 2 Cups Milk
  • 1 18-20 ounce Box Powdered Cake Mix
  • 1 Cup Chopped Pecans or Walnuts
  • 1 12 ounce bag Chocolate Chips (Semi Sweet, Milk Chocolate, White, Peanut Butter)

Instructions

  1. Heat Oven to 350 degrees. Cover a 9x13 baking dish with non stick spray or grease with butter and coat with flour.

  2. In Medium Bowl whisk together pudding mix and milk until fully incorporated.

  3. Add in Cake mix and mix with a spoon (Will be too thick a batter for a whisk. Mix until fully incorporated.

  4. Stir in Chips and Nuts and pour into baking dish. Batter will be thick and needs to be spread out.

  5. Bake for 40 minutes, top will feel a bit springy to the touch. Don't use a toothpick as it can capture the melted chocolate chips and give the appearance that the cake is not cooked.

  6. Frost with frosting if desired, or serve warm with vanilla ice cream. Enjoy!
