Personally, I had one of those days lately. Last Sunday I was sitting at the kitchen table, in the middle of the living room, and I wanted to make cookies. We were in the middle of having our tile put down, well halfway done. In addition, we were also in the middle of using repurposed tile that needed to be scraped and cleaned. We were preparing for carpet, patching cracks in walls, priming, painting, moving appliances, moving everything that was not nailed down. And well, some things that were nailed down. LOL.

And that is where I thought I wanted to make cookies for everyone. In between sweeping, dusting, and all the rest of it. On Sunday, I made the cookies using a Red Velvet cake mix. But in the past I have made them with chocolate, lemon, and funfetti. They are really lovely in so many flavors. And you can add a cup or two of chocolate, white, or peanut butter chips to dress them up. And, it is so very nice to bless your family with a lovely warm cookie, even in the middle of chaos. Sure, it is nice to make cookies from scratch, but when that is not an option, Easy Cake Mix Cookies make a lovely alternative.
