Where you and your family want a sweet treat, but the house is not in the condition you need, or there are not enough ingredients, or even you just don’t have the time or energy to whip up something homemade? Well these Easy Cake Mix Cookies are the perfect solution!

I had one of those days recently

Personally, I had one of those days lately. Last Sunday I was sitting at the kitchen table, in the middle of the living room, and I wanted to make cookies. We were in the middle of having our tile put down, well halfway done. In addition, we were also in the middle of using repurposed tile that needed to be scraped and cleaned. We were preparing for carpet, patching cracks in walls, priming, painting, moving appliances, moving everything that was not nailed down. And well, some things that were nailed down. LOL.

I just wanted to make cookies, easy cookies

And that is where I thought I wanted to make cookies for everyone. In between sweeping, dusting, and all the rest of it. It is in those types of days that Easy Cake Mix Cookies are the perfect cookie to make. First, they only have 3 ingredients, unless you want to add in some chips or M&M’s. Second, they only take a few minutes to mix up. And third, they produce wonderfully flavored cookies in under 30 minutes, and with little effort.

I made Red Velvet Cake Mix

On Sunday, I made the cookies using a Red Velvet cake mix. But in the past I have made them with chocolate, lemon, and funfetti. They are really lovely in so many flavors. And you can add a cup or two of chocolate, white, or peanut butter chips to dress them up. And, it is so very nice to bless your family with a lovely warm cookie, even in the middle of chaos. Sure, it is nice to make cookies from scratch, but when that is not an option, Easy Cake Mix Cookies make a lovely alternative.

Easy Cake Mix Cookies

Easy Cookies that only take 3 ingredients and are finished in 30 minutes!

Course Cookies, Dessert, Treats
Cuisine American

Prep Time 5 minutes
Cook Time 12 minutes

Ingredients

  • 1 15 oz Cake Mix You can use any flavor you choose
  • 2 Eggs
  • 1/2 Cup Butter, softened or melted
  • 2 Cups Chocolate Chips, vanilla Chips, M&M's or other candies or nuts Optional

Instructions

  1. Preheat oven to 350 degrees.

  2. In a large bowl mix all ingredients until incorporated.

  3. Drop by spoonful onto a parchment covered or greased cookie sheet. Depending on how many cookies and the size you want, you can used different size spoons to drop. In the photo I used a large tablespoon and made 18 large cookies. You could use a teaspoon and make 24-30 cookies. I have done both. For smaller cookies bake 9-11 minutes. Larger cookies 13-15 minutes.
