Family Friendly, Fall Meals to Share
The minute that the heat of summer starts to subside, I find myself wanting to cook and bake! While Summer is all about salads and evenings of BBQ, Fall makes me think of casseroles, hot out of the oven, ooey and gooey with cheese. And fresh baked goods that fill my home with the scent of pumpkin! Below are my favorite Family Friendly Fall Meals to Share!
With school, sports, fall colds, and a myriad of other reasons, sometimes making a warm and cozy evening meal is a little bit challenging. With that in mind, I have created a list of 3 of my favorite fall dinners, and one of my favorite fall desserts. These recipes are perfect to make ahead and freeze. Then, they will be perfect to pull out when needed, or, to deliver to the home of a friend or family member in need of a yummy, yet easy, meal!
Each Recipe is perfect for doubling, or tripling, so you will have plenty on hand as life gets busy. And, these are EASY recipes using mostly store-bought ingredients. Feel free to make them your own with your favorite brands.
Oven Baked Spaghetti and Meatballs
This easy dish is perfect to keep in the freezer until you or someone you know needs it. Then, just cook in the oven until fully heated, straight from the freezer at 325 for 50 minutes covered. Most everyone enjoys this dish, and it is so much easier on a weeknight than making spaghetti from scratch.
1-2 pounds of store-bought frozen meatballs. My family loves protein, so we usually use 2 pounds.
2- 24oz jars of Tomato sauce
12 oz of pasta- Cooked
2 cups shredded Mozzarella Cheese
½ cups grated parmesan
Fresh Basil or Parsley….or dried!
In a greased 9×13 pan or 3-quart casserole dish, combine meatballs, Tomato Sauce, and Cooked Pasta. Cover with Mozzarella and Parmesan. Cover with foil and bake for 45 minutes at 325. Remove foil and bake for 5 additional minutes. Serve with Veggie, Green Salad, and a crispy, crunchy loaf of French Bread!
Homemade Mac and Cheese.
This Fall and Winter favorite has all of the needed comforts to keep the family warm and cozy during the cooler months. Plus, if you make it ahead, it is an easy dinner on busy school nights, or after a day at the Soccer Field. It also makes the perfect dish to take to a friend or family in need.
Recipe
4 TBLS Melted Butter- (I melt it in the dish while the oven is warming)
1 Pound dry elbow macaroni
1 pound sharp cheddar cheese- shredded
1/2 pound medium cheddar- shredded
4 ounces gruyere- grated
1 cup half and half
4 cups whole milk
Pepper to taste
In 9×13 pan mix melted butter and dry macaroni. Pour milk, pepper to taste, and about 2/3 of cheese over macaroni. Mix together until all is fairly well distributed. Cover with remaining cheese. Bake for 45 minutes at 325 until pasta is soft. Remove foil and cook 5 additional minutes.
Two notes: If you are planning on freezing this meal, it is better to use cooked macaroni, bake for 30 minutes then freeze. Then you can thaw in refrigerator, and heat for 30 minutes in a 325-degree oven until ready to serve. Also, this dish makes a complete meal when you add a package of cut up hot dogs and a crown of broccoli cut into chunks. The hot dogs add flavor and protein, and adding the broccoli inside sometimes makes it a little more palatable for little ones.
Breakfast Burritos for Breakfast or Dinner!
My family has always loved breakfast burritos! They are a fairly well-balanced meal for breakfast, lunch or dinner. I love to make these ahead of time and then heat up for busy work and school mornings. But, they also make a great dinner. For dinner, I pair them with Cheese Covered Refried Beans, and Pineapple or Oranges. This combination always puts the kids to sleep, and the cleanup is so easy!
Recipe
1 pound breakfast sausage, turkey sausage, or lean ground beef cooked, crumbled, and drained.
1 -2 yellow or orange bell peppers, diced and sauted until soft. I typically throw them into the side of the pan when the meat is almost done cooking to save on clean up.
3 ounces of shredded cheese
8 eggs scrambled
4 large baking potatoes, baked, and cut into small chunks. For added flavor, you can pan fry the chunks in a little butter with salt and pepper.
16 small tortillas, or 8 large tortillas covered with a wet paper towel and softened for 30 seconds in the microwave. This will make them more pliable for wrapping the burritos.
6 ounces of Salsa or chopped tomatoes.
Prepare all the ingredients above. Then layer all components in each burrito, and roll tucking both ends in. Place on a large cookie sheet and freeze for 30 minutes. Then wrap individually, or place in a large ziplock bag for storing. I prefer to wrap in foil or parchment so that they can easily be cooked in the oven for 40 minutes at 350 to heat. Or, they can be reheated in the microwave for 2 minutes. Warning, 2 minutes in most microwaves will make 2 burritos very hot! It is good to heat them thoroughly and wait a minute or two before biting in!
White Chocolate Chip and Cranberry Pumpkin Bread
This recipe could not be simpler! I use a boxed pumpkin bread mix, add in half a bag of white chocolate chips and a handful of dried cranberries. Easy to make, easy to share.
