Melting Moments- An Easy Easter Egg Cookie

Have you ever had a recipe that everyone talks about, you go back to year after year, and you are always so surprised that they are not only easy to make, but super delicious? I do, and they are these Melting Moments- An Easy Easter Egg Cookie. The original recipe is called Melting Moments and has been in my family for at least 50 years. And of course, they are called Melting Moments, because they literally Melt in your Mouth!
My Aunt Hellace
My Aunt Hellace sent a yearly Christmas Letter that included family details, marriages, deaths and adventures. It was always informative, and always included an extra treat. She would send one of her amazing recipes as a Christmas present. From soft caramels, to chocolate dream pie, to everything in between. But our favorite all time recipe is Melting Moments. The delicious cookies are like a shortbread and then made into a sandwich cookie with buttercream frosting. What could be better! We often dye the frosting in different colors depending on the holiday or event. They are delicious!
She was a Great Baker!
My Aunt Hellace was an amazing cook! She would make the difficult recipes that no one else would attempt, and always have a perfect result. That of course is another reason we love this recipe. We could have the wonderful flavor of an Aunt Hellace recipe, but we could achieve it with east and success! My Aunt Hellace was such a good baker that everyone wanted her to make them treats. In fact when my Grandfather was working with Hellace’s husband Fred, the two would often go home to Aunt Hellace’s for lunch.
On one such occasion, my Aunt Hellace had made a Lemon Meringue Pie just for my Grandfather to enjoy. As she was walking toward him to show him the pie topped with a foot of fluffy meringue, she tripped and the pie ended up upside down on his lap. True story! But, she was such a great baker that my Grandfather asked for a spoon and proceeded to eat the entire pie off his lap!
Recently I pulled this recipe out of my recipe box as I was making a lot of cookies! My daughter Tori is going on a missions trip to Romania this summer. Her youth group was having a bake sale and so I thought I would make as much as I could to help defray the cost of the trip. One of the recipes that I used was for these Melting Moments. I had not had them in a while, and they reminded me of how much I love them, and how easy they are to make.
This year I Made Melting Moments into and Easy Easter Cookie
I have made melting moments for years, and have colored the center butter cream various colors to match baby showers and holidays. I have also flavored the butter cream with vanilla, almond, or raspberry extract depending on the flavor preference of the guest of honor. But for Easter this year, I decided to color the dough! I thought that they would look adorable as little multi colored Easter Eggs and I think they do!
After combining the dough, I separated it into three bowls, added food dye, and used a plastic food service glove to incorporate the dye into the dough. Then I simply finished the cookies and assembled them into multi colored Easter Eggs. Yum! I have made the cookies using either a Tablespoon or Teaspoon as a mold for the cookies. If you are wanting a perfect bite sized melting moment, then use the teaspoon. If you want a more substantial cookie, use the Tablespoon. Either way, if your spoon is a perfect half sphere, you will need to press down on the dough once it is on the cookie sheet. That way the cookies will not roll around once you make them into sandwich cookies.
Melting Moments- An Easy Easter Egg Cookie
These quick and easy cookies are very tasty, and only include 4 ingredients + food dye. They can be made plain without dye, or dressed up with dyes or different flavorings for the butter cream. Also you can make them large or small depending on the desired result.
Ingredients
- 2 Cups All Purpose Flour
- 1 Cup Butter Softened
- 1 Cup Powdered Sugar
- Butter Cream Frosting
Instructions

Preheat oven to 350

In Mixing Bowl with High Sides combine Flour and Sugar. Add Butter and Mix with Butter until crumbly. I use a hand mixer for this step.

If you are using food dye, separate the crumbles into 3 bowls. Add dye to each bowl and use a plastic food service glove to combine the dye into the dough until it is fully incorporated. Do not over mix the dough or the cookies will be tough.

Use a Teaspoon or Tablespoon measuring spoon depending on how large you want the cookies. Since the cookies will be combined into sandwich cookies, a Teaspoon makes the cookie into a perfect bite. Dip the spoon into extra powdered sugar and coat the inside of the spoon. Scoop a spoonful of dough and press it into the bowl of the spoon. Place on greased cookie sheet. If you have trouble getting the dough out of the spoon, use the tip of a sharp knife.

Bake 8-10 minutes or until cookies show a slight browning near the bottom. If you are using a Tablespoon it will take a few minutes longer.

Remove baked cookies to a cooling rack. Once cooled, frost the bottom of one cookie, and then complete the sandwich by placing the bottom of another cookie onto the frosting.
In case you are Gluten Free, I will tell you that I have used both regular all purpose flour, and with this last batch I used Gluten Free Cup for Cup flour. The cookies were not quite as tender as with the regular flour, and I needed to add about 1 Tablespoon of water to the recipe to help it combine, but overall, I am really pleased with the results. 4 of our family members are GF, so I typically make everything GF for holidays.
