Extreme 7 Layer Dip
Have you ever had 7 Layer Dip? You know with Refried Beans, Sour Cream, Salsa, Cheese, Tomatoes, Green Onions and Sliced Olives? It’s awesome! First, it is super easy, second, it’s affordable, third, it travels well, and fourth….it is so yummy! It is an amazing party food, but our family goes a bit further. We serve it on a bed of lettuce, add a bunch more ingredients, and have it for dinner! So, although this post is about Extreme 7-layer dip, it is truly about Extreme 11 Layer Dip! I have included all of the amazing layers that our family loves, and truly, it becomes a well rounded meal and a great way to get the family to eat a lot of vegetables under the guise of eating “chips and dip” for dinner.

Are you a fan of 7 Layer Dip? I am! I have been from way back. When I was in my early 20’s my friend Debbie invited me, my sister, and my Mom for a sleepover. My friend Debbie’s mother in law, and a few sisters in law’s were going to be there as well. We ordered pizza, made appetizers, and watched the Miss America Pageant. And, we had a blast! We laughed for hours, played games, and shared stories. This night was filled with many hysterical memories, but it is also my memory of when I first had this dip.
I had Never Tasted Refried Beans Before
Prior to this sleepover, I had never tasted canned refried beans before. We had refried beans when we went to my Dad’s favorite Mexican restaurant, but I don’t think we ever had them at home. We were a meat only burrito kind of family. LOL. So, when I saw Debbie opening a can of refried beans, I was not sure what to expect. When I saw the consistency, and the aroma, I was not sold that this “dip” was going to bring joy to our taste buds. I was so wrong! Yum. Once we started scooping yummy and crunch corn chips into the completed dip, I knew that this would be a favorite dip.
Over the years I have evolved the original recipe, and although it does not always include all of the ingredients on the list, these are our family’s favorites. It is perfect for appetizers, the Super Bowl, friends who drop by, movie nights, and served on a bed of lettuce, a perfect dinner. So, what do you put on your 7-layer dip, or 8 or nine? The Recipe
Extreme 7 Layer Dip
This 7 Layer Dip takes the original recipe to the max, by adding 4 more layers!
Ingredients
- 1 Can 31 oz Refried Beans
- 1 12 oz Sour Cream
- 2 Cups Salsa Green or Red (or half and half)
- 1 Bag Shredded Lettuce
- 1 Pound Ground Beef- Cooked and crumbled Add Salt and Pepper to taste, or one pouch of taco seasoning.
- 12 Ounces Shredded Cheddar Cheese Can also use Mexican Blend Cheese
- 2 Avocados Cut into small dices
- 2 TBLS Lime Juice
- 1 Pint Cherry Tomatoes Cut in Half
- 1 Can Olives Sliced
- 2 Stalks Green Onion Sliced in small rounds
- Jalapenos We use jalapenos from a jar for a milder taste.
- 2 Bags Corn Chips Strong enough to scoop extreme 7 Layer dip
- Extra lettuce to serve as a salad if desired
Instructions

Cook and drain ground beef and set aside to cool.
Chop avocado and mix with a pinch of salt and lime or lemon juice.

On a large platter layer the beans, sour cream, salsa, and lettuce. I usually put green salsa on one end, and red salsa at the other end.

Layer Ground beef, over lettuce. Then layer shredded cheese, avocado, tomatoes, green onions, olives, and jalapenos.

You can add or reduce as much as you would like. I typically also serve this with salsa mixed with sour cream on the side for those who want it served a bit "wet".
