Easy Italian Pasta Dinner Salad

These easy pasta salad can be used as a side dish, potluck favorite, or as a traveling meal.

Ingredients

  • 1 Pound Spiral Cut Pasta or Elbow Macaroni
  • 2 Stalks Celery -Chopped
  • 2 TBSP Red or Yellow Onion- Minced
  • 1/2 Red Bell Pepper- Chopped
  • 10 Florrets Broccoli- Chopped and stems removed
  • 1/2 Pound Cheddar or Provolone- Cubed
  • 1 Pound Salami or Roast Beef- Cubed

Dressing

  • 1 Cup Italian Dressing
  • 1 Cup Mayonaise
  • Salt and Pepper to Taste

Instructions

  1. Boil Water and Cook according to package directions and then cool thoroughly. 

  2. While water is boiling, wash and prepare all vegetables, cheese, and salami.

  3. Whisk mayonnaise and Italian Dressing, salt and pepper to taste. Add Red Pepper, Onion, and Celery and mix. Pour Dressing over cooled pasta and mix. Once fully incorporated, add broccoli and gently fold. Refrigerate 1 hour. Can be served as a main dish or side dish. 

Recipe Notes

This salad is so easy to make, and travels well. I make a spare to share as it is a nice salad for someone in need of an easy dinner. You can use Cheddar, Mozzarella, or Provolone Cheese, and change the Salami for Roast Beef to change up the flavors.
