I love sharing meals both in my home and to those in need of a good meal. Hospitality does not just have to be in our homes. We can show hospitality by taking a dish to someone in need. Struggles vary for everyone, but a death in the family, a new baby, an illness, or too busy a schedule, can throw the average home into a tailspin. Showing hospitality by taking a meal to those in need can bring the family a sense of warmth that is needed when times are difficult. I love these 3 Summer Recipes to Share. They are easy to make, you will have most of the ingredients already in your home, and they are tasty too!
Each of these recipes is generally enough for one family of 4-5. You can double the recipes and with very little extra time, have a spare to share. It is so easy to add on a few extra ingredients and make a double meal. One for you, and one to share with someone who just needs a pick me up. I like to double the recipe I am making for my family, and then take the extra meal to the family the next day. It is not very much additional work, but it takes the work of preparing a meal off of someone else’s difficult or trying schedule. Following are a few of my favorite summer recipes to make, and have a spare to share simply double the recipe!
Traveling Grilled Chicken Salad with Homemade Dressing
This is an easy traveling salad, perfect to give to someone in need of an easy and tasty meal. The homemade dressing is delicious!
Ingredients
- 1 Pound Boneless, skinless Chicken Breast
- Salt, Pepper, and Garlic Powder to Taste
- 1 Can Beets
- 1 Can Kidney Beans
- 1 Loaf Dry French Bread
- Butter and Olive Oil
- Mushrooms
- Carrots
- Broccoli
Dressing
- 1 Tbsp Finely Chopped Red Onion
- 4 Tbsp Pickle Relish
- 4 Tbsp Chili Sauce
- 4 Tbsp Ketchup
- 1 Cup Mayo
- 3 Tbsp Pickle Juice- Literally from the dill pickle jar.
- Salt and Pepper to taste
- 8 Servings Field Greens, Lettuce, or Romaine Lettuce.
Instructions

Heat Grill or pan to temperature. If using coals, wait until the goals have turned grey and the flames have ceased. Dry chicken breasts and sprinkle with salt, pepper, and garlic powder to taste. Cook 3-4 minutes on each side depending on thickness. Measure temperature for safety to ensure chicken is fully cooked. Set aside and let rest.

Wash and dry all produce. Finely dice one small slice of Red Onion for Dressing. Cut Remaining Onion if desired for salad. Cut all remaining produce into bite sized pieces and store in Mason Jars or plastic container for traveling.

Cut french bread into bite sized pieces. Heat medium pan to medium heat. Pour in a swirl of olive oil and two tablespoons of butter in the pan and heat until lightly sizzling. Pour in bread pieces and sprinkle with salt, pepper, and garlic powder to taste. Cook over medium heat allowing bread to crisp and brown flipping pieces frequently. Remove from heat and let sit. Then package in air tight container.

Whisk diced red onion, relish, chili sauce, ketchup, mayo, and pickle juice until fully incorporated. Taste using a piece of lettuce. If you do not have Chili Sauce, use additional ketchup and add garlic powder. Place in Mason Jar or Plastic Container

Assemble salads and enjoy!
Recipe Notes
For this traveling salad you can include any items that you prefer in a salad, or use whatever produce you have on hand! I love to double this salad and have one for dinner, as well as have a spare to share with a family in need. It is also great to assemble on a Sunday night for dinner, and than use the extra for salads throughout the week.
Easy Italian Pasta Dinner Salad
These easy pasta salad can be used as a side dish, potluck favorite, or as a traveling meal.
Ingredients
- 1 Pound Spiral Cut Pasta or Elbow Macaroni
- 2 Stalks Celery -Chopped
- 2 TBSP Red or Yellow Onion- Minced
- 1/2 Red Bell Pepper- Chopped
- 10 Florrets Broccoli- Chopped and stems removed
- 1/2 Pound Cheddar or Provolone- Cubed
- 1 Pound Salami or Roast Beef- Cubed
Dressing
- 1 Cup Italian Dressing
- 1 Cup Mayonaise
- Salt and Pepper to Taste
Instructions

Boil Water and Cook according to package directions and then cool thoroughly.

While water is boiling, wash and prepare all vegetables, cheese, and salami.

Whisk mayonnaise and Italian Dressing, salt and pepper to taste. Add Red Pepper, Onion, and Celery and mix. Pour Dressing over cooled pasta and mix. Once fully incorporated, add broccoli and gently fold. Refrigerate 1 hour. Can be served as a main dish or side dish.
Recipe Notes
This salad is so easy to make, and travels well. I make a spare to share as it is a nice salad for someone in need of an easy dinner. You can use Cheddar, Mozzarella, or Provolone Cheese, and change the Salami for Roast Beef to change up the flavors.

Just this week I found out that my son’s class at school was having an end of the year party. My Son is 18 and graduating high school. He is in a special program, and I know that the teachers and aides that have guided and supported him are deserving of more than I could ever give to them. I happened to be making this Easy Ice Cream Pie and thought it would be a great addition to the party! He carried it to school in a small insulated carrying case packed in ice. It traveled beautifully, and was enjoyed by all the well deserving teachers and students!
Easy Ice Cream Pie
This quick and easy Ice Cream Pie is not only easy, it is delicious!
Ingredients
Cookie Crust
- 25 Chocolate Oreo Cookies Crushed
- 1/4 Cup Melted Butter
Pie Filling
- 1/2 Gallon Ice Cream or Sherbert Use two flavors for more flavor
- Chocolate Syrup
Topping
- Whipped Cream
- Garnish
Instructions
Cookie Crust

Crush Cookies in plastic bag or pulse in food processor until crumbs. Include creme filling in the crushed mixture.

Mix crushed cookies and butter until incorporated.

Press cookie mixture into one 8 inch pie plate or tin. Drizzle Chocolate Sauce over bottom. Let Rest in Refrigerator for 30 minutes.
Pie Filling

Soften first flavor of Ice Cream for 10 minutes. Then scoop flat sections of the ice cream into the bottom of the pie plate. Smooth into a rounded mound and place in the freezer for 30 minutes.

Soften second flavor of Ice Cream for 10 minutes. Scoop flat sections of the ice cream into and layer over the first layer of ice cream. Use a warm spoon to smooth the ice cream into a nice rounded mound shape. Place in the Freezer for 30 minutes.
Garnish

Garnish the Easy Ice Cream Pie with Whipped Cream, Fruit, Additional Chocolate Sauce, or Candies depending on the flavors of Ice Cream you have used. Enjoy!
Recipe Notes
This Easy Ice Cream Pie can be used with any flavors of Ice Cream or Sherbert. We typically make one for our family, and a spare to share as they are so easy and tasty.
Some of our favorites have been Cherry and Chocolate Fudge, Chocolate with Chocolate Mint Ice Cream, and Strawberry Vanilla garnished with Strawberries dipped in white chocolate!
The possibilities are endless!
